CALS faculty are planning a number of study abroad courses in Winter and Spring 2022. Check out our website for a list of upcoming courses, including a mix of new courses and others which have been offered previously.

Samantha Harden, associate professor and extension specialist in Human Nutrition, Foods, and Exercise, has developed An exploration of health, community, and yoga in a Blue Zone of Costa Rica, which will be offered for the first time next winter. This is a great example of a course which offers a novel educational experience in an international location and blends the instructor’s research and personal interests. Further, Dr. Harden is collaborating with a local yoga studio, which helped provide connections in-country, and furthers relationships with campus and community.

Tom Archibald, associate professor and extension specialist in Agricultural, Leadership, and Community Education, has developed Youth and Development in Senegal. Dr. Archibald has leveraged relationships built through his work on USAID Feed the Future projects in Senegal to create an immersive wintermester course where students will learn about youth development, entrepreneurship, and agricultural value chains, in a service learning context in West Africa.

Also new this year is CALS: A Focus on Animal Agriculture and Sustainability in Australia and New Zealand. Katharine Knowlton, the Colonel Horace E. Alphin Professor of Dairy Science and Cindy Wood, associate professor of Animal and Poultry Sciences, collaborated to offer an exciting course comparing and contrasting production systems and issues in the US and Australia and New Zealand. The course was developed in partnership with a study abroad provider focusing on these two countries, but also involved personal connections Drs. Knowlton and Wood have developed through the years.
