Description

These courses were created and are intended for virtual students in the Commonwealth Campus program, the OMALS program, or Virginia Teacher Recertification.  This course is a comprehensive study of major and minor vegetable crops of Virginia, the US, and the world in relation to production practices, sustainability, crop development, nutritional value, and quality characteristics.
 
Syllabus

Learning Objectives

Upon completion of the course, students will be able to:

  • Identify and classify major vegetable crops.
  • Understand the environmental and cultural requirements for vegetable production.
  • Know where vegetables are grown in North America and Virginia.
  • Understand the economic importance of vegetables.
  • Be familiar with vegetable consumption trends.
    Understand quality attributes and the nutritional value of vegetables.
    Know the best conditions for post-harvest handling of vegetables.
    Understand the origin and history of vegetables.
