Description

The economics of contemporary issues in the food system will be identified and analyzed.  Issues such as convenience, plant, animal, and human diseases, food borne illnesses, food waste, genetically modified food technology, antibiotic use, immigration policy, food labeling, trade policies, to name a few, will be explored in crop and animal production, food wholesaling, food processing, and food retailing, for their likely impact throughout the entire food system. Basic economic theory will provide the foundations for analyzing impacts and the theory of economic policy also will be presented to gain a framework for assessing the types of responses that are viable and likely most effective in addressing these issues.

Learning Objectives

Upon completion of this course, students will be able to:

  • Select the appropriate conceptual framework for analyzing an issue in the food system.
  • Analyze the likely directional (qualitative) impact a change in one part of the food system will have on other parts
  • Identify which responses (policy instruments) to changes in the food system are likely to be compatible with economic incentives designed to change outcomes in the food system.
  • Identify the likely effectiveness of different responses (policy instruments) in response to changes in the food system.
  • Build mathematical models applicable to applied economic analysis.
